Gratitude and Joy……….Day 2

Do you ever have those days when you wish there were two of you? I seem to have many of those days, but then I think to myself……..could the world handle two of me. LOL!!! Even though I know there are not two of me and there can never be two of me, I’m especially thankful for my other half. I’m so thankful for a husband who is willing to pitch in and help around the house when I need it.

Today was a busy day with work, bookwork and virtual learning with a 4th grader. I didn’t have time to make supper, so Donnie offered to pitch in and make supper tonight. We had ground beef thawing out and Harley requested slushburgers.

Are they slushburgers or sloppy joes at your house? We’ve always called them slushburgers.

Slushburgers for supper!

I’m so grateful that he is willing to cook for us.

I told you when our website was published that I would be sharing some recipes with you along the way, so tonight we’ll talk about slushburgers (sloppy joe’s).

Sweet & Sour Slushburgers

1 or 1.5 lbs ground beef (browned with onion)

1 can Campbell’s Tomato soup (don’t use the cheap stuff)

salt to taste

pepper to taste

1/8 cup brown sugar (you may decide to increase this)

1/8 cup apple cider vinegar (you may also decide to increase this)

Brown the ground beef with chopped onions. Mix in the can of soup, brown sugar, apple cider vinegar, salt and pepper. Make sure that you like the balance of flavors. Bring to a boil and simmer until the flavor is intermingled. Sometimes they taste better the second day.

Sweet & Sour Slushburgers

We love to eat them with a side of Bush’s baked beans and plain potato chips to scoop the extra meat and the beans up off the plate. Yummy!
