Gratitude & Joy……….Day 5
Keeping with the “Gratitude” theme for November, I decided to keep writing about what I’m thankful for. The past couple of days at our house have been kinda rough. With the new COVID 19 restrictions, Harley’s Jr. High basketball season was cut short. I felt horrible having to tell her Saturday morning that not only was her practice cancelled, but the rest of the season cancelled as well. I think she took it better than I did. She said, “Mom, it’ll be ok”. Pretty mature for a 12 year old kid. I explained what had happened and we talked about the loss, but we also talked about what we might gain. Harley loves animals and spending time with them, so more time with the new puppy. She also loves making things for her friends and crafting with Taylor and I. She was already thinking of what she could make for her friends for their birthdays because now she would have more time. It’s all in our perspective. While one thinks of loss, another thinks of opportunity. I’m super proud of all the work that Harley and her team have put in this year. I’m also proud of Harley and how she is handling what I think of as loss and she thinks of as an opportunity. I’m thankful for a child that adapts to change better than I do. I’m also thankful for my grandma Elaine and her creativity and craftiness. It has been passed down another generation.
With Thanksgiving coming up, it makes everyone think of food, so I’m going to share another quick and easy recipe with you this evening. We don’t ever have round steak cut on our beef when we process, but for some reason, we ended up with 5 packages this last time. Now the question is, “What do I use it for?” So, I thought I’d try something different with it. I thawed 2 packages of it out partially, cut it into strips and and threw it in my Pressure Cooker XL with some fajita seasoning and sautéed it. Once completely cooked, I added a bit of water, put my meat setting on 15 minutes and let the pressure cooker work it’s magic. The meat was delicious and so tender. Donnie didn’t even believe me when I told him that I used the round steak to make fajita meat. I sliced my peppers and onions, added some olive oil and fajita seasoning to the pan and finished preparing my vegetables. Sometimes you just have to be a little creative with your cut of beef.
